Turkey tail (Trametes versicolor) is named for the concentric rings of colour on its fan-shaped cap that resemble a turkey's tail feathers. It has been used in traditional Chinese and Japanese medicine for centuries — and is now the subject of growing scientific interest. It is the first and only medicinal mushroom the FDA has funded for cancer research, with studies demonstrating its ability to help slow the spread of cancer cells and, when used in tandem with conventional cancer treatments, improve survival rates.

Beyond cancer support, turkey tail is one of the best-researched natural sources of beta-glucans — polysaccharides that modulate and strengthen the immune system, support gut health through prebiotic action, fight oxidative stress, and manage inflammation. Most commercial mushroom products use mycelium grown in bags on grain substrates such as rice or oats. It is virtually impossible to fully separate the mycelium from the substrate — meaning the final product contains significant amounts of grain, not just mushroom. The polyphenols and beta-glucans measured in lab tests of these products are frequently coming from the grain substrate, not from the mushroom itself. Additionally, mycelium grown in sterile grain conditions does not develop the same ancient biological intelligence as mushrooms grown in living forest ecosystems.
